Tom Yum Fried Rice

Khao Pad Tom Yum (in Thai) or Tom Yum Fried Rice is a variety of Central Thai stir-fried rice dishes. It uses Tom Yum ingredients for the delicious Tom Yum flavors.

 

Choice of Proteins Ingredients Quantity
Chicken Protein 1/4 lb
Shrimp Frozen Thai white rice 8 oz 
Cherry tomatoes 2
Cilantro 1
Scallion 1
White mushroom 2-3
Lemongrass 1
Kaffir lime leaves 2
  Tom Yum  Sauce 80g

 

 

Prepping: 

  1. Defrost the frozen rice in a microwave (make sure it's still firm and cold so that it's not too cooked when stir fried). 
  2. Wash all vegetables. Thinly cut scallion, kaffir lime leaves, and cilantro.
  3. For white mushrooms, use a damp paper towel or a soft mushroom brush to wipe each mushroom to remove any dirt. Alternatively, lightly rinse the mushrooms with cool water and pat dry with paper towels, but do not soak the mushrooms.Cut the mushrooms into halves or quarters.
  4. For chicken and tofu, cut it into bite size. For shrimp, to peel raw shrimp, pull off the head and legs and leave the last tail. De-vein by making a shallow slit down the middle of the back to expose the black intestine (To butterfly, make the slit deeper). Lift out the black vein and rinse it out under cold running water.
  5. for lemongrass, wash and remove the knobby end of the stalk. Cut off the tough upper stem of the stalk. Remove tough outer leaves and find the tender inner flesh (If your thumbnail can easily pierce it, that's tender). Finely chop the inner tender portion and use in your dishes.

 

Cooking: 

  1. Heat 2 tbs of water or oil in a wok or large skillet over medium high heat.
  2. Add the tom yum sauce, and then protein, saute and toss until it is well coated.
  3. Add rice and all other ingredients. Turning over rice with ingredients several times to coat and stir frying for 2-3 minutes. You want the rice to begin to have a toasted smell, making sure that all the ingredients are constantly being moved around the pan for even cooking. If your pan seems to have cooled down to the point where the ingredients are no longer sizzling, you may need to turn the heat up slightly.
  4. Transfer to serving platter.
  5. Garnish with cilantro leaves and additional scallion if desired.
