Moo Pad Ka-Pi

Moo Pad Ka Pi (in Thai) or Shrimp Paste Stir Fried Pork Belly is a popular southern dish which is made from pork belly, shrimp paste and palm sugar. The dish is aromatic, sweet and a little bit salty. It is delicious with steamed rice or sticky rice.

Ingredients:

Protein  1/2 lb
Garlic 2 cloves
Shallot 1
Lemongrass 1 stalk
Chili peppers 2
Kaffir Lime Leaves  2
Scallion 1 stalk

Shrimp Paste

Palm Sugar

1/2 tbs

1 tbs

 

Prepping

1.Wash and slice shallot, garlic, lemongrass, scallion and kaffir lime leaves.

2.Wash, dry and slice chili peppers on the diagonal.

3.Wash and cut pork belly into thick pieces.

 

Cooking

1.Use a blender or a mixing bowl (or if available, use mortar and pestle) to mix shrimp paste, garlic, shallot, lemongrass and chili peppers.

2. In a saucepan over a low heat, saute the mixture with pork belly until the pork is cooked through.

3.Add palm sugar, kaffir lime leaves and, if preferred, additional chili peppers.

4Garnish with scallion, remaining kaffir lime leaves and chili peppers.
