Gaeng Massaman is a famous southern Thai curry, influenced by Malay and Indian cuisine. This curry, flavored with tamarind and coconut milk, is loaded with dry aromatic spices and fresh herbs, many of which are not frequently used in other Thai curries, e.g. cardamom, cinnamon, cloves, star anise, cumin, bay leaves, nutmeg and mace. Massaman combines what we love about South Asian cuisines with typical Thai flavors. The harmony of sweet, salty, and sour is the heart of this mild yet rich and full-flavored curry. This dish squashes the false notion that unless a dish is hot and spicy, it's not real Thai food.
Gaeng Massaman is typically served with steamed rice.
