Ingredients (two servings):

  1. Shrimp - 8 shrimps (21-25 size)
  2. Shallots - 2 shallots
  3. Cherry Tomatoes - 4 tomatoes
  4. White Mushroom - 1 pack
  5. Lime - 1 lime
  6. Fresh Chilies - 2 chili peppers
  7. Cilantro - 2 to 3 stems
  8. Lemongrass - 2 pieces
  9. Kaffir Lime Leaves - 2 leaves
  10. Galangal - 2 pieces 
  11. Tom Yum Paste - 2 oz.
  12. Tom Yum Sauce - 4 oz.

Instructions:

  1. Cut lemongrass, galangal, tomatoes, shallots, kaffir lime leaves, mushroom and cilantro into small pieces.

     

     

     

     

     

     

     

  2. Put 4 cups of water in a sauce pan or a pot to boil.
  3. Add the lemongrass, galangal and kaffir lime leaves into the boiled water. Add Tom Yum Paste, stir and mix it with the water, then add tomatoes and shallots. Wait a few minutes for it to release all the herb flavors.

     

     

     

     

     

  4. Toss in the shrimp, add Tom Yum Sauce, do a quick stir and then reduce the heat to low.

     

  5. Add the mushrooms and let the soup boil for another minute.
  6. Throw in a handful of chopped cilantro, and give the soup a final stir.
  7. Turn off the heat, then add lime juice as desired.
  8. Garnish the soup with cilantro and, if desired, sliced fresh chilies.
