Have you noticed lately that almost everything is getting put in a bowl? From poke sushi to smoothie bowls, people are eating their breakfast, lunch, and dinner in one. The wonderful thing about a bowl is you can incorporate so many healthy ingredients into one dish, which is so simple and trendy. Ingredients can be interchangeable and change with the season and you can even theme your bowls for a special treat!

We have a delicious recipe using one of Thailand’s most delicious fruit, Dragon Fruit, also known as Pitaya. This fruit is best known for its black and crunchy seeded white flesh. The taste is mildly sweet and low in calories. Dragon Fruit is full of Vitamin C (3X more than an orange) and also has 12% of your daily value of fiber per serving! In our recipe we also include blueberries that are full of antioxidants and a very good source of vitamin K, vitamin C, manganese, fiber and copper.

Here’s what you’ll need - Serves 1 large bowl:

  1. 2 Cups of frozen Dragon Fruit cubes
  2. 1 Medium frozen Banana
  3. Splash of Coconut Water
  4. 1 Tbsp Chia Seeds
  5. 1 Tbsp of Coconut Shavings
  6. 1 Ounce of Blueberries
  7. ¼ cup of diced apple

What you need to do:

  1. Place the Dragon Fruit, Banana, and Coconut Water in a high speed blender. Blend until smooth but has a very thick almost custard-like consistency.
  2. Pour into a bowl - add toppings how you’d like and ENJOY!
